Zesty Herbs Garlic Butter Steak Bites with Smashed Potatoes
Garlic butter steak bites with lightly smashed baby potatoes and green beans, ready in 40 minutes. Zesty Herbs brings garlic and Provençal herbs to the steak, and the butter left in the pan dresses the beans, so nothing goes to waste.
Ingredients
- 1½ lb Sirloin steak
- 1½ lb Baby potatoes
- 3 cups Green beans
- 3 tbsp Butter
- 4 cloves Garlic
- 2 tbsp Olive oil
- Salt
- 6 scoops Zesty Herbs FLAVRBOMBS™
You will need
- Large pot
- Large cast-iron skillet
- Meat thermometer
- Tongs
- Knife
- Cutting board
Method
Cook the potatoes and beans
- Boil the potatoes in salted water for 15 minutes, adding the trimmed green beans for the last 3 minutes. Drain.
- Lift out the beans. Lightly smash each potato with a fork and toss with 1 tbsp of butter, a pinch of salt and 2 scoops of Zesty Herbs.
Prepare the steak
- Pat the steak dry and cut it into 1 inch cubes. Toss with 1 tbsp of olive oil, a pinch of salt and 3 scoops of Zesty Herbs.
- Finely chop the garlic.
Sear the steak bites
- Heat a cast-iron skillet over high heat with the remaining 1 tbsp of olive oil. Sear the steak in a single layer, in two batches, for 2 to 3 minutes, turning once, until browned and it reaches 63°C (145°F) for medium-rare.
- Lower the heat, add the remaining 2 tbsp of butter, the garlic and all the steak back to the pan and toss for 30 seconds.
Plate and enjoy
- Toss the green beans in the garlic butter left in the pan with 1 scoop of Zesty Herbs.
- Serve the steak bites with the smashed potatoes and green beans, spooning the garlic butter over the top.
