Piri Piri Pork Tenderloin with Roasted Sweet Potatoes and Green Beans

Prep 15 min · Cook 30 min · Serves 4

Seared and roasted pork tenderloin with a touch of honey, served with roasted sweet potatoes and green beans, ready in 45 minutes. Piri Piri's smoky paprika and cayenne suit lean pork, and the honey gives the outside a light glaze that the sweet potatoes echo.

Ingredients

  • 1 Pork tenderloin (about 1¼ lb)
  • 2 Medium sweet potatoes
  • 3 cups Green beans
  • 3 tbsp Olive oil
  • 1 tbsp Honey
  • Salt
  • 6 scoops Piri Piri FLAVRBOMBS™

You will need

  • Large sheet pan
  • Oven-safe skillet
  • Meat thermometer
  • Knife
  • Cutting board
  • Tongs

Method

Prepare the ingredients

  1. Preheat the oven to 425°F (220°C).
  2. Peel the sweet potatoes if you like and cut them into 1 inch cubes. Trim the green beans.
  3. Pat the pork dry and trim off any silver skin.

Roast the sweet potatoes

  1. Toss the sweet potatoes with 1 tbsp of olive oil, a pinch of salt and 2 scoops of Piri Piri, and spread them out on the sheet pan.
  2. Roast for 15 minutes.
  3. Toss the green beans with 1 tbsp of olive oil and 1 scoop of Piri Piri, add them to the pan and roast for 12 to 15 minutes more.

Sear and roast the pork

  1. Rub the pork all over with 3 scoops of Piri Piri and a pinch of salt.
  2. Heat the remaining 1 tbsp of olive oil in an oven-safe skillet over medium-high heat and brown the pork on all sides, about 5 minutes.
  3. Brush with the honey, move the skillet to the oven and roast for 12 to 15 minutes, until the centre reaches 63°C (145°F).
  4. Rest the pork for 5 minutes before slicing.

Plate and enjoy

  1. Slice the pork into rounds and serve with the sweet potatoes and green beans, spooning any pan juices over the top.
