Piri Piri Chicken Drumsticks with Roasted Potatoes and Portuguese Salad

• 6 Chicken drumsticks
• 10 Mini Potatoes
• 12 Mini tomatoes
• 1/4 Iceberg lettuce
• 1 Sweet pepper
• 1 Red onion
• 1/2 cucumber
• 1/2 bunch of fresh cilantro
• Olive oil
• Dijon mustard
• Salt
• Piri Piri

You will need

• Oven
• Baking sheets
• Mixing bowls
• Knife
• Cutting board
• Measuring cups and spoons
• Whisk

Prepare the ingredients

1. Preheat the oven to 400°F (200°C).
2. Wash and halve the mini potatoes and tomatoes.
3. Chop iceberg lettuce, red onion, and cilantro.
4. Dice sweet peppers and cucumber.

Roast mini potatoes and chicken drumsticks

5. Toss mini potatoes with 1 tbsp olive oil, salt, 2 scoops of Piri Piri and set aside.
6. Make small cuts in the drumsticks and season them with 1 tbsp of olive oil, a pinch of salt, and 2 scoops of Piri Piri.Place the chicken and potatoes in a baking sheet facing down and roast them for 15-20 minutes until golden and tender.

Make vinaigrette

7. In a mixing bowl, whisk together 1 tsp of mustard, apple cider vinegar, 1 tbsp olive oil, 1 scoops of Piri Piri, and a pinch of salt.
8. Combine lettuce, tomatoes, red onion, sweet pepper, cilantro, and mix well.

Assemble Portuguese salad

9. In a mixing bowl, combine lettuce, tomatoes, cucumber, red onion, sweet pepper, cilantro, vinaigrette and mix well.

Serve the dish

10. Serve the roasted Piri Piri chicken drumsticks and mini potatoes alongside the dressed salad.
