Ingredients

6 Chicken drumsticks
10 Mini Potatoes
12 Mini tomatoes
1/4 Iceberg lettuce
1 Sweet pepper
1 Red onion
1/2 cucumber
1/2 bunch of fresh cilantro
Olive oil
Dijon mustard
Salt
Piri Piri FLAVRBOMBS™

Directions

Prepare The Ingredients

Preheat the oven to 400°F (200°C).
Wash and halve the mini potatoes and tomatoes.
Chop iceberg lettuce, red onion, and cilantro.
Dice sweet peppers and cucumber.

Roast Mini Potatoes and Chicken Drumsticks:

Toss mini potatoes with 1 tbsp olive oil, salt, 2 scoops of Piri Piri FLAVRBOMBS™ and set aside.
Make small cuts in the drumsticks and season them with 1 tbsp of olive oil, a pinch of salt, and 2 scoops of Piri Piri FLAVRBOMBS™.Place the chicken and potatoes in a baking sheet facing down and roast them for 15-20 minutes until golden and tender.

Make Vinaigrette

In a mixing bowl, whisk together 1 tsp of mustard, apple cider vinegar, 1 tbsp olive oil, 1 scoops of Piri Piri FLAVRBOMBS™, and a pinch of salt.
Combine lettuce, tomatoes, red onion, sweet pepper, cilantro, and mix well.

Assemble Portuguese Salad

In a mixing bowl, combine lettuce, tomatoes, cucumber, red onion, sweet pepper, cilantro, vinaigrette and mix well.

Serve The Dish

Serve the roasted Piri Piri chicken drumsticks and mini potatoes alongside the dressed salad.
