Korean BBQ Air Fryer Crispy Chicken Sandwich
A crispy buttermilk chicken thigh sandwich made in the air fryer, with quick pickled cucumbers and a spicy Korean BBQ mayo, ready in 35 minutes. Korean BBQ seasons the crunchy coating and the mayo, so every bite has sweet, smoky heat and toasted sesame without deep-frying.
Ingredients
- 4 Chicken thighs (boneless & skinless)
- 2 cups or buttermilk
- 2 tbsp of soy sauce
- 3 tbsp gochujang

- Take the tray out to flip the chicken, then let it cook another 5-10 minutes.
Pickled cucumbers
- Slice the cucumber into thin slices.
- Toss cucumber slices with rice vinegar, sugar, and a splash of soy sauce.
- Let rest for 10 minutes.

- Add about 3 tbsp of Kewpi mayo into a small bowl, along with 1 scoop of Korean BBQ spice and 1 tbsp of gochujang.
- Mix well and set aside.
Assemble and enjoy
- Toast the brioche buns.
- Spread the Korean BBQ mayo across the top and bottom of each bun.
