Jolted Cowboy BBQ Grilled Flank Steak with Corn on the Cob & Coffee Lime Mayo
Grilled flank steak with charred corn on the cob and a coffee lime mayo, ready in 35 minutes and enough for four. Jolted Cowboy has real coffee in it, which builds a deep crust on the steak, and a scoop in the lime mayo makes the corn just as good.
Ingredients
- 1.5 lb flank steak
- 4 ears of corn, husks removed
- 2 tbsp olive oil
- 4 scoops Jolted Cowboy
- Salt and pepper to taste
For the lime mayo
- ½ cup mayonnaise
- 1 scoop Jolted Cowboy
- 4 tbsp lime juice
Method
Prepare the ingredients
- Preheat your grill to high heat. Rub the flank steak on all sides with 1 tbsp of olive oil, a generous pinch of salt and pepper, and 2 scoops of Jolted Cowboy. Rub the ears of corn with the remaining 1 tbsp of olive oil and season with 2 scoops of Jolted Cowboy. In the small bowl, whisk together the mayonnaise, 1 scoop of Jolted Cowboy, and lime juice to create the mayo. Set aside.
Get grilling
- Place the steak and corn on the hot grill. Grill the steak for 4-6 minutes per side for medium-rare, depending on thickness. Grill the corn for 10-15 minutes, turning occasionally, until kernels are tender and lightly charred. Remove the steak from the grill and let it rest for 10 minutes before slicing thinly against the grain.
Plate and enjoy
- Serve the sliced flank steak with the grilled corn on the side. Slather the corn with the Jolted Cowboy lime mayo or use it as a dipping sauce for the steak.
